What is Einkorn, you ask? It is an ancient grain, and I mean ancient! Einkorn dates back to 8000 BC! That’s during the Neolithic period, when Stonehenge was created. By humans or aliens, we may never know! Seriously, Einkorn is an ancient grain.
So why did it vanish and how did we find it again? Now that is a COOL story. Rewind to 1991. Two hikers in the Italian Alps noticed something sticking out of a melting glacier. Turns out it was a body!
Not just any body, but a body frozen in time from (you guessed it) the Neolithic period! His name as we know it today is Ötzi the Iceman. Believe it or not, Ötzi the Iceman’s last meal was still perfectly preserved in his stomach. Ötzi last ate a meal consisting of Ibex meat, roots, berries and einkorn wheat!

Now back to Einkorn. It is the healthiest wheat you can eat! It is the ancestor of wheat and has never been hybridized, or crossed with another wheat species. Meaning it is pure wheat.

einkorn is great for gluten intolerance
The gluten content in Einkorn is from the A genome, while wheat is from the D genome. This is what sets Einkorn apart from the rest – this gluten breaks down faster and easier than wheat especially when mixed with water. It is a diploid with 14 chromosomes, compared to 42 in modern wheat – holy moly!
For those with a gluten intolerance, Einkorn is the flour you need to enjoy bread again! Jovial flour (my favorite) is available at many grocery stores, including Whole Foods, but it can also be purchased online.
Jovial Foods sources their einkorn flour from a family-owned acreage in Italy where the einkorn is grown 100% organically. It is pesticide free and best of all – glyphosate free!
Glyphosate is a chemical (found in Round-Up weed killer) that is sprayed on wheat. Glyphosate is linked to gluten intolerance and Celiac disease in the U.S.

However, due to its gluten structure, it does not bake the same as modernized wheat. You can sub a 1:1 ratio of einkorn flour in “quick breads”, such as pancakes, waffles, muffins, and banana bread.
For breads that require proofing or rising, the recipe’s liquid ratio will need to be altered, or else the result will be extremely dense bread. For reference, all recipes made with einkorn flour will have a denser texture than flour you may be used to.
Because it is weaker in gluten, it isn’t able to hold bubbles quite as well. Don’t let that discourage you! Einkorn still tastes amazing. I personally prefer it as the flour in my sourdough recipes.

does it taste different?
Personally? Yes, it does. But in a good way! I find it to be a little sweeter. It has a unique flavor, almost nutty even. It does give my sourdough bread a deep, robust flavor profile far superior than modern bread flour.
